Affiorato extra vergine olijfolie wordt verkregen met behulp van een eeuwenoude methode. Na het malen van de olijven, drijft zo'n twee a drie procent van de olie van nature naar de oppevlakte van de olijvenpasta drijft. Deze wordt door middel van handmatig afschuimen gewonnen, nog voordat deze koud wordt geperst en centrifugaal wordt gescheiden. De Affiorato wordt dus uitsluitend verkregen door het pletten van de olijven en heeft een daardoor volle uitstraling en een perfecte balans tussen smaak, geur en kleur.
De naam Gran Cru wordt meestal gegeven aan extra vergine olijfolie van de hoge kwaliteit, die de beste olie van de olijfgaard waar ze vandaan komt vertegenwoordigd. Vanwege hun unieke karakter worden deze meestal in beperkte oplage geproduceerd.
