Extra Virgin Olive Oil Castel di Lego PDO Monti Iblei is obtaianed from Moresca and Tonda Iblea olives. The collection is concentrated in the months of September and October and is done manually. The oil extraction is run cold through continuous two phases cycle.
According to the product specification of Monti Iblei PDO Consortium, the additional geographical mention “Frigintini” or "Valtellaro" is reserved for extra virgin olive oil obtained for at least 60% from Moresca olive variety. Other varieties up to a maximum limit of 40% may be used.
