The scialatielli is a type of pasta used in Campania region, typical of Amalfi where they were created by the chef Enrico Cosentino in 1978. Their name is assumed to be derived from two words of the Neapolitan dialect "scialare" (enjoy) and "tiella" ( cooking pan).
