Antonio Mattei opened his business in 1858, in the historic center of the city of Prato. At the time the bakery mainly produced bread and pasta, in addition to confectionery products. The famous anise-flavored Cantucci and consequently the successful production of Prato Almond Biscuits, originate  from the traditional Bozza (bread loaf of Prato). Under the management of Ernesto Pandolfini, in the 1920s, the factory was reorganized and the traditional confectionery production increased: Biscotti di Prato with Almonds, Brutti Buoni, Crispy Sweet Toast, Mantovana cake and the Brioche pastry with glacée cherries.
