The sweet salt of Cervia Riserva Camillone is identified by the orange colour. This salt is harvested by hand, using the ancient multiple collection method. It is a coarse-grained sea salt whose production is very limited. Also for this reason it is a a real high quality "cru" salt, which has obtained to be part of the Slow Food Presidia. This salt is the only one in the world produced in an artisanal way with the old method of multiple collection. It is packaged raw, after being left to dry in the sun, covered by small curtains of reeds.
According to tradition you give salt as a gift to wish good luck and prosperity.

LA RISERVA CAMILLONE
The historic Camillone salt pan is the last of 149 salt pans forming the millenarian Cervia salt settlement, clear evidence of that salt civilization whose descendants still work there voluntarily in order not to dissipate such precious memory. Even today this unique salt, available in limited quantities, is harvested according to the ancient craft method called "multiple harvest" so that the culture and the experience of the salt workers of Cervia continue living in this so unique and precious "Camillone Reserve" sweet salt.

This natural salt is not refined, treated or artificially dried, therefore it may appear damp and lumpy.

Parco della Salina di Cervia

The Cervia salt pan is the most northerly salt pan in Italy and it extends over 827 hectares in a natural park which has always been a natural reserve for lots of animal and vegetal species.
The salt pan is composed of more than 50 basins, surrounded by a 16 kilometres canal which allows the water of the Adriatic Sea to enter and exit the salt pan. The collection of the salt takes place in the middle of the pan, in the basins called "rango" divided in three tanks of 1 kilometre long and 453 metres wide. Here the salt is collected following the artisanal method, but with the help of a conveyor belt.
